From the beginning of the journey, the mouths surprise us, full of contrasts and finesse, then the entries are top! The pressed pears of grated truffle and fine lime truffle emit an intense fragrance. We're in the real, the intensity! We celebrate first with the eyes, then with the nose and finally the taste buds. I recommend the Saint-Jacques millefeuille with its topinambour purée filled with crunchy vegetables. I also enjoyed the sparkling rhubarb with its ice cream with blackcurrant pepper, so refreshing! A well-deserved Michelin star! Bravo!
