I had heard they offered vegan burgers at this restaurant, so I was excited to try them out. However, when I arrived, I couldn't resist the salad on the menu. It was a stunning dish made with hydroponically grown baby greens, which I was told were grown on site (and I believe it because they were incredibly fresh). The salad was so delicious that it inspired me to purchase a small hydroponic system to try growing my own greens at home. Talk about effective STEM education!
There are limited options at this restaurant, with only a beyond burger and build your own salad available. The beyond burger was disappointing, as it only consisted of the patty and a bun without any additional toppings like tomatoes or lettuce. It's a sufficient option if you are visiting the space center, but bringing a sandwich might be a better lunching option (make sure to check park regulations). Overall, the Kennedy Space Center could definitely improve their vegan food offerings.

During our visit to the Kennedy Space Center, we opted to have lunch there in order to save time. It seemed like half of Florida had the same idea, as the wait time after placing our order was a lengthy 45 minutes. We ordered Beyond burgers with fries and a salad, but I was disappointed to find that the burger lacked any toppings, only consisting of the patty and bun. It was a bit underwhelming considering the advanced space technology around us, but it did the job of keeping us satisfied.
