Sibs - Melbourne

Came here while on vacation and decided to head to Sib's! The food is pretty normal bar food but the service was slow. I'd recommend allocating a decent amount of time for this place. The vibes were festive and lively, basically what you'd expect out of a bar.

My wife and I spent our first night in the USVI on St. Thomas at the Mafolie Hotel. Their acclaimed restaurant was closed the night we were there (Tuesday, 12/26/23), and they recommended Sib 's, just a short uphill walk from the hotel. We started our dinner with the artichoke/spinach dip, then, ordered a Cobb salad for me, and the chickpea stir fry for her. We also had a few drinks--Lime in D ' Coconut, Bushwacker, and we split a Kon-Tiki Sour. All the food was well-presented and tasty. The open-air dining room was island, while the food was American (except for the drinks). The restaurant had plenty of guests, but it didn 't seem overly crowded. Service was friendly and relaxed, and we met the owner 's mother, who chatted with us about the restaurant 's history. We look forward to returning to Sib 's on our next USVI trip!

We are from Iowa and we had lodging near this restaurant. I had the 1/2 rack of ribs and my husband had the chicken dinner. It was so good The price was reasonable and the food was great. Going for breakfast In the morning The staff was very friendly

We got early dinner here one evening. We ordered the Ahi tuna sandwich and chickpea stirfry . The food was good but the service on that day was extremely slow.

I've been to Sibs a quite few times now, but today was not the day. I ordered a Grilled Chicken Sandwich with fries. Like all the time I've been there the fries are amazing. The grilled chicken sandwich wasn't up to par. It was undercooked like crazy. My grilled chicken sandwich had an uncooked crunch to it as I bit into. The bad thing about it is that I ordered the food to go. I'm not driving back there lol. I also had an order of the honey sriracha wings. Those were fantastic. It was a packed night and the service was good. The only thing I can trust from Sibs right now are some wings and fries
