As a regular customer now, I've noticed that they have started adding new vegan options to their menu. The setting is cozy and it's best to make a reservation, as they often sell out of their popular items. The menu is clearly divided into vegan and non-vegan sections, making it easy to navigate. The staff are quick to make changes and respond to special requests. When I asked if they could create a vegan chocolate treat, they surprised me the following week with a delicious cocoa nib and chestnut bread. It's a perfect blend of traditional German and Japanese bread styles, reflecting the chef's training in Germany. This is truly the best bakery I've ever been to! (Review updated on 2021-11-06)
This bakery is only open one day a week, on Saturdays from 11 am to 5 pm. When we first visited at 1 o'clock, we found limited options aside from large bread loaves, with only a small vegan bagel available. It's recommended to pre-order to ensure availability, as we saw many trays of pre-ordered items waiting for pickup. On our first visit, we left empty-handed and disappointed after making a one-hour trip. However, on a subsequent visit a few weeks later, we pre-ordered an olive focaccia, a maron glace almond bagel, a black beans pink pepper bagel, a vegan sandwich, and a vegan pumpkin soy milk soup with grilled vegetables. Our order was ready for pickup on Wednesday afternoon. When we picked it up, we noticed that one slice of bread in the soup was not labeled vegan, so we asked for a replacement. The vegan sandwich and olive focaccia were delicious, but the bagels lacked flavor and the soup portion was small. While the quality of ingredients was high, we felt that the prices were a bit too steep for the portion sizes. Additionally, we were disappointed by the excessive use of plastic and hope to see the bakery make more environmentally friendly choices in the future.

Since becoming a regular customer, they have started introducing new vegan options on the menu. Ordering bread through their website is easy, with clear sections for both vegan and non-vegan options. They are quick to make changes based on customer feedback; for example, I requested a vegan chocolate loaf and was thrilled to see a delicious cocoa nib and chestnut brioche on the menu the following week. The bread is a perfect blend of Gaijinbrot (inspired by the chef's training in Germany) and Japanese Sokupan. This is truly the best bakery I have ever been to!
