I've dined at Le Truck several times and have always been impressed and satisfied with the food, even though it can get crowded. They occasionally offer vegan specials, but you can also request the street noodles to be made vegan, which come with rice noodles, mushrooms, and a delicious sauce. Mushroom tacos are always available as well. The owner, Adam, has experience as a vegetarian cook and is well-versed in vegetarian dishes, while Raven, the other owner, understands vegan needs very well. They are both available to assist at any time, even during the busiest periods. Le Truck can get quite busy and in high demand, but please note that their hours can be unpredictable and vary from day to day.

I ordered two tacos: one with salmon and one with fish. I really enjoyed the sweet and spicy flavors of the salmon. Both tacos were delicious! However, if you don't like spicy food, you might want to keep that in mind.
