I told the server, I am vegan and she produced a menu in English, where the vegan options were clearly marked. Several options I had scattered mushrooms, tofu with ginger-mano, garlic-bread (divided) and the rice-manano set that made for a filling meal. The breakfast menu does not have a standard vegan option, but I explained to the staff and they make me a sandwich for tomorrow. The inn is very nice and the staff is great.
No seperate vegetarian/vegan menu. Vegetarian options are featured on the menu waiter spoke very little English so took us a little time to derive what vegan options we could order. We ended with a large part of frits (very tasty and homemade), roasted mushrooms (very fat, too heavy on the dough and lacking taste), silk tofu and a portion rice. This was only 1 out of 2 places served in this tiny town Veg / Vegan and this place came down. Go to the place a few doors for a more authentic Japanese meal from homemade Soba Noddles
We stayed for 1 night in April 2019 and had the frits, beer batter mushrooms and a salad for dinner (very delicious). There are no vegan options for breakfast, but we knew that before. The Ryokan itself is very old-fashioned, but we slept very well. There is no onsen bath in the house, but free shuttle service to connected ryokans onsen. The staff was very friendly, speak English and they even drove us to the Snow Affenpark.
Not sure that they had a vegan separate menu, but clearly marked vego options on the normal menu and good to talk to about it. Had the tofu and the deep fried mushrooms. My partner had the vego arancini balls (not vegan) all delicious)
