Taspen's Cafe Bakery - Conifer

We decided to grab a quick meal and were pleasantly surprised! The mushroom melt and eggplant sandwiches with cashew cheese were incredibly tasty. The accompanying house salad was also very delicious.

Several vegan options! The mushroom melt was delicious! Will be my new road trip lunch spot!

I tried giving 5 stars but that is reserved for restaurants fully 100% Vegan or Vegetarian. Taspen's is as close as it gets. Since being introduced to Taspens a few months ago I can't count how many times I've been back. I've brought many friends who are not Vegan and challenged them to order Vegan items from the menu and ALL of them were astounded. Like others have shared, they can make almost anything on their menu with a Vegan option. I've had so many items here. Some of my favorites (always Vegan) are the Black Hole Burrito and especially the Vegan Sunrise Pancakes! They're incredible! Their Cosmic Veggie Vegan Pizza astounded me. It was excellent with the cashew cheese. I cannot get enough of their Bossman's Black Bean Burger on the Gluten Free Bun as well as their Mushroom Melt and Tunaless Chickpea Salad Sandwich. Wifey loves their Quesadilla. Then there's the numerous salads. Getting the sandwiches I mentioned comes with a great salad too. Needless to say, it's obvious I LOVE this place. They are continually developing more Vegan options. If you're Vegan or Vegetarian you will not be disappointed. PLUS, the entire staff will go above and beyond to make sure you leave as a satisfied customer/diner! Updated from previous review on 2019-12-31

My husband and I stumbled upon this restaurant while in Conifer for a show and I am so glad we did. We noticed the vegan sign and decided to check it out. We were greeted warmly and enjoyed some delicious food. Despite arriving close to closing time, the staff was kind and patient with us. The mushroom patty melt I ordered was flavorful and the gluten-free bun was delicious. The restaurant is not completely vegetarian, but they have great options for vegetarians. My husband even said we should make the 45-minute drive from Denver to visit again.

I have only visited once and ordered the Neptune salad. It was beautifully presented, like a cover of a gourmet magazine, and almost too pretty to eat. But I couldn't resist and it was absolutely delicious! My friend ordered the Retrograde BLTA and we were both so impressed that we will definitely be returning to the restaurant.
