James Victor, originally from the US and the chef and owner of Project V19, is three years into his creation of this restaurant and bar at the end of a quiet street in the northeast end of Colima. The first part of his project, the...restaurant, is completed and the subject of this review. Since he was a kid, he has had a passion for food and he shares his enthusiasm with his customers, not just with his food but with his friendly demeanour. We love that he prides himself in sourcing local ingredients and works directly with the local farmers. Our meal started with some very tasty bruschetta, on the house. The highlight was the BBQ shrimp, a generous portion, tender and full of flavour. The lasagne was good, not the best we have had, but still we were not disappointed. The desert, a soft warm cookie with fantastic ice cream sounds weird to emphasize but we found mexican ice cream generally to be disappointing) was very rich and filling, so if you are into desert, save room. We liked Project V19 and if ever in Colima again, we would return as much to visit James and his project as for the food.
Located at a relatively isolated place, immersed in a residential zone under construction away from downtown, with an austere decoration. When you see the menu you notice a casual-fashionable -juvenile food and drink list that includes wings, pizza, pasta, seafood and meats and a wide...variety of beers and popular cocktails. Though it’s not the case of evaluating a “haute cuisine” restaurant, the taste of the dishes, the balance of flavors, the very good seasoning and the quality of the ingredients make the great difference. In this first visit my wife and I had the chance to taste the artisan pizza and pasta with shrimps and salmon. This pizza really tasted good with a twist that made it special. The pasta was cooked “al dente” just like it should be with an appropriate sauce on it and some shrimps and pieces of salmon very well cooked and seasoned. The “mojitos” were really good and we hope to taste the meat choices next time. The service was excellent, but I would recommend that all of the waiters could precisely answer questions about how each dish on the menu is fixed.
