Trattoria Corchia - BERCETO

I ate here with my British friends and we thought the food was pretty bad. I would have liked to have had fish and chips on my pizza like in Manchester but the blokes thought this a right funny thing to say. Not again.

Know that while this place is probably impossible to reach without a car, and is FAR off the beaten path (30-40 mins off the Autostrada), it is well worth the effort. They have a unique way of cooking their pizzas that incorporates a cast iron bell that is heated over a fire, and then lowered over the pizza to cook it. Quite fascinating to watch (they will let you check it out if they 're not too busy). Hours vary, so confirm before you head their direction. Corchia is a WONDERFUL village to walk through, and offers some wonderful photo-treasures.

La pizzeria è sempre il solito. mentre siamo andati dopo una bella nevicata, il posto era assolutamente incantevole. il locale è sempre il solito: rustico, imprevedibile. A differenza dell'ultima volta che siamo andati, questa volta la pizza era ben-leavened, ben cotto e ingredienti assolutamente buoni. Torneremo sicuramente.
