We were served 2 pieces of guts as a taster, perfectly seasoned and dry, and of a quality that is not often found at a butcher in my opinion. I enjoyed delicious homemade fries with a juicy overcooked steak topped with a creamy bearnaise sauce served on the spot. However, the steak was cooked rare, which is not as flavorful, but it was still tender. The steak was sliced, which I personally do not prefer. Despite the busyness, the service was top-notch.
