Hydraulic Hearth - Buffalo

Woah woah woah the food here exceeded expectations. stopped in with a friend and got the walnut prosciuttini pizza and fried cauliflower the texture of the pizza was awesome and the flavor was balanced. the cauliflower was crispy and the sriracha aioli actually had a good amount of heat. I like that the dining room was all order at the bar. the menu is extremely limited, so don't come unless you're in the mood for wood-fired pizza. the only criticism I have is that the beers are in the pricier end, but not a big deal because the food did not disappoint

Hydraulic quickly became one of my favourite places in Buffalo and is always incredible. Great drinks and amazing pizza and a wonderful atmosphere to boot. While all of their wait staff is great, Kait is my favorite waitress and an absolute. She is so friendly and helpful. She is also the most attentive waitress I've ever had the pleasure of meeting and provides the best service/experience I've ever had. Edit: In the last 3 years, my opinion has only been affirmed time and time again. My husband and I held our anniversary party here and the staff were so helpful and accommodating. The owner was our point of contact throughout the whole planning process and was a huge help. We were able to enjoy our time with great food and drinks and even a bit of corn hole. Jeff, the manager, is so involved and is a delight. The bar staff provide incredible recommendations and have a refined and exciting menu at all times. If you are thinking about giving this establishment a try: do it. You will not be disappointed.

Dope experience. Was allowed to bring our puppy in. She sat and chilled in the chair while my family and I ate the most delicious thin crust brick oven pizza.

The Hearth is a Buffalo icon. The falafel sandwich is the sandwich of the year. Danny Dispo is an angel.

The restaurant offers a fantastic variety of beverages, such as beers, wines, and cocktails. The pizzas are delicious, but they should offer more size options. The standard pizza is too large for one person, yet not quite enough for two. It may be a good idea to order multiple pizzas when dining with a large group. The restaurant can get quite noisy on Saturdays. Despite this, I will definitely return.
